Mostly it's because we already know all the answers John was looking for, and we already know that even if he gets any of his questions answered, it wouldn't change anything about his situation.
It's why any more info on john's backstory is best left to flashback scenes on the original show, because there just isn't enough of a story there to make an entire spin off about it.
What would make an interesting spin off is a show about Ellen when she was younger. Seeing her meet Bill, start the Roadhouse. Running into younger John, making friends with him, with John as a small time supporting character who shows up at most a few times a season, until he finally gets Bill killed.
That's a story that would show us something new, get us a new side of the hunter world that we haven't seen yet and would allow us to see things from a different pov.
Or Mary Campbell, teenage hunter, that would be interesting as well if you do have to go for a backstory. Since we don't know nearly as much about her and her family as we do about John's.
